If you can go to the store and pick up a jar or bottle of honey and hold it up to the store llght and see straight through it. Leave it on the shelf you are wasting your money. If it is clear it is dead and has no active living enzymes and you will not get a drop of nutritional value from it. It is the texture of cake frosting and spreads beautifully on bread. It is also very easy to scoop with a spoon for use in tea. Its taste is so mild and delicious that I'm already halfway through the jar I just got. the funny thing is I hadn't been using honey regularly for years but this stuff has converted me back.The texture may make it more difficult to use in baking (you can warm it slightly to make it a liquid) but for every other use, it's perfect as-is.
